Mini Bandeja Paisa with El Parcero Chorizo

Experience a bold twist on a Colombian classic with our Mini Bandeja Paisa with El Parcero Chorizo, a perfectly portioned platter packed with vibrant flavors and the rich, smoky taste of premium chorizo.

Ingredients

  • 1/2 lb El Parcero Chorizo, sliced or whole
  • 1 Cup Cooked red beans, seasoned
  • 1 Cup White rice, cooked
  • 2 Eggs
  • 1 Small avocado, sliced
  • 4–6 Fried plantains (maduros), sliced
  • 1 Tbsp Olive oil
  • Salt and black pepper, to taste

Instructions

  1. Heat a skillet over medium heat with olive oil. Cook the chorizo until browned and cooked through. Remove and set aside.
  2. In the same skillet, fry the eggs sunny-side up or to your preference.
  3. Arrange each mini platter: a scoop of rice, a scoop of beans, slices of plantain, a fried egg, avocado, and the cooked chorizo.
  4. Season with salt and black pepper as needed. Serve warm.
