Ingredients

  • 2 green plantains
  • 1/2 cup reserved cooking water
  • 1 tbsp butter
  • Salt, to taste
  • Induveca Salami, sliced
  • Frying cheese
  • 2–4 eggs
  • Vegetable oil

Instructions

  1. Mangú: Peel and boil the plantains in salted water until tender. Mash with butter and a bit of the cooking water until smooth and creamy.
  2. Induveca Salami: Fry the slices until golden and crispy. Set aside.
  3. Cheese: In the same pan, fry the cheese until nicely browned.
  4. Eggs: Fry eggs to your liking (traditionally sunny-side up).
  5. Serve the warm mangú topped with Induveca Salami, fried cheese, and eggs.
