Cibao Longaniza Subs with Peppers

Ingredients

  • 1 lb Cibao longaniza, sliced
  • 2 bell peppers (any color), sliced
  • 1 Onion
  • 4 hoagie rolls or sub buns
  • 1 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook the Cibao longaniza until browned and fully cooked. Remove and set aside.
  2. In the same skillet, sauté the bell peppers and onion until soft, about 5 minutes. Season with a pinch of salt and black pepper.
  3. Return the longaniza to the skillet and toss with the peppers for 1–2 minutes.
  4. Split the rolls and toast lightly if desired. Fill each bun with the longaniza and pepper mixture.
