Mofongo with Cibao Longaniza & Béchamel

A bold and satisfying take on a Caribbean classic, this Mofongo with Cibao Longaniza & Béchamel brings together crispy mashed plantains with rich, savory toppings. Ingredients

  • 2 Plantains  
  • 10 oz. Cibao Longaniza
  • 4 oz. Béchamel  
  • 1 oz. Butter  
  • 2 oz. Chimichurri  
  • 1 pinch Salt

Instructions

  1. Fry plantains. 
  2. Mash with butter and chimichurri and salt.
  3. Cook Cibao longaniza. 
  4. Plate and top with longaniza and béchamel.
